Opdracht beschrijving

In the project Bean me Up! (see: an entire team will work over the next two years to develop a positive business case for the local cultivation, processing, and application of field beans (Faba bean). A new production chain is being realized here with SME parties that develop applications for the use of field beans in bread and confectionery products, soups, sauces, etc.

For example, the company NMK Esbaco (bakeries ingredients) in Hoorn is working on replacing imported soy from Canada with locally grown Field bean. In the pastry market a clear distinction is made between Almond paste (high quality grade) and Pastry food (banketspijs). Within the segment of pastry food you will focus on the comparison between import Soy and locally produced Faba bean. For the sake of sustainability this could also account for the comparison between Almond paste and Pastry food as production and import of Californian Almonds is nowadays also under debate. We believe that this replacement of import soy by local beans will have a sustainable impact on the chain for several reasons. The question is whether we can also establish this scientifically.

De onderzoeksvraag is:

The student group will carry out a Life Cycle Analysis for the chain of players and the successive steps aimed at replacing imported Soy from Canada with locally grown field bean. Based on which qualitative and quantitative data can we conclude that this new application fits into a sustainable inclusive production chain?

The student group will analyse all successive steps in both the original (Soy) and in the Faba chain and work out a formal LCA. Following this, NMK Esbaco would like to see an analysis/application of this knowledge, by calculating the impact of our semi-finished product (food) on the Eco-score. The customer will use this LCA as part of storytelling for the introduction of more sustainable products and applications into the marketplace.

Furthermore, there is the possibility to carry out an economical business case for this whole new short chain assessing the pricing strategy needed to create a viable business case for the whole chain including the separate segments. (agriculture, the grower; application: food/confectionary and pastry partners; retailplayer; procestechnology: the Faba protein producer including commercialisation of side stream components such as starch and fibers.
